To Make Over Or Not To Make Over, That Is The Question

Last week I posted a recipe for our seasoned pork, and I always make a big enough roast to do a “meat make over” for the second time around. The beauty of the seasoned meat roasts offered by JR Meat Co. is how versatile they can be! I have always been a big proponent of leftovers. Waste not want not, right? I know that in some households leftovers is a naughty word, but it doesn’t have to be… i really try to repurpose the food I have leftover, meaning I come up with something entirely different the second time. Not to say that when I get that nightly text asking, “What’s for dinner mom?” The reply can be less than excited but usually when they taste it, the attitude quickly changes. The last post I used the seasoned pork for sliders and it will now become carnitas. You can use the meat up to 4-5 nights later when kept in the refrigerator and weeks later if frozen.

A couple nights after using the pork for sliders I prepared Carnitas bowls with Cilantro Lime Rice. I was also able to use the remainder of the cabbage from the coleslaw. And if planned well, the rice could also be a leftover from a prior meal that week.

Ingredients

Ingredients needed for Carnitas Bowls with Cilantro Lime Rice:

  • JR Seasoned Pork Roast, shredded
  • White or brown rice, prepared according to directions
  • Fresh lime and chopped cliantro for rice
  • Can of whole pinto beans or black beans if preferred
  • Pico de gallo, homemade or prepared from the refrigerated produce section
  • Can of corn
  • Avacado
  • Shredded Cheddar Cheese
  • Sour Cream

Directions

  1. Warm the seasoned pork roast.
  2. Prepare your rice according to package directions if not using leftover.
  3. When rice is done, squeeze the juice from one lime into rice and fold in the amount of chopped cilantro according to taste.
  4. Warm the pinto beans on stove top or microwave.
  5. After preparing your warm ingredients, now prepare the cold ingredients in separate bowls.
